Summer Farro Salad (Serves 2)

Farro with roasted Ontario carrots, slivered snap peas, radish, and mint. Served with feta, pistachios and a lemon vinaigrette. 

Ingredients: farro, red wine vinegar, carrots, olive oil, kosher salt, snap peas, radish, mint. dressing: red wine vinegar, garlic, lemon, organic olive oil, kosher salt, black pepper.
